There is still a lot of buttermilk ready made in the fridge, the price for it is so expensive so i shouldn't let it expired by the dates. So found this recipe "chocolate cake" by Barefoot Contessa. Everything is 1 st time, new recipe for the cake, the buttercream & the way to decorate it. Finally the trial success, so below is the outcome. Got a good response from my office mate.
Love the outcome though not so perfect.
A bit watery/( berpeluh) sikit coz i put it in the fridge. Even put outside for a few hours the watery bubles still there.
Want a bite. Its really delicious....yummy...yummy
Chocolate Cake by Barefoot Contessa
1 3/4 cup flour
3/4 cup cocoa powder
2 tea spoon baking soda
1 tea spoon baking powder
1 tea spoon salt
2 cup sugar
2 large eggs, room temp
1 cup buttermilk, room temp
1/2 cup vegetable oil
1 tea spoon vanilla extract
1 cup hot coffee (freshly brewed)
Method
Preheat the oven to 170. Follow individu oven temperature. Butter two 8″ cake pans, then cover the bottoms with parchment paper, and butter and flour the pans or you can use 1 big pans like me. Set aside.
Mix together the flour, sugar, cocoa powder, baking soda, baking powder and salt in the bowl of an electric mixer.
In a small bowl, combine the eggs, buttermilk, vanilla, and oil with a whisk. With the mixer on low, slowly pour the wet ingredients into the dry, until just combined. Again, with the mixer on low, pour in the coffee slowly. Use a spatula to make sure everything is combined, and then divide the batter into the cake pans or you can put all in one pan.
Bake the cakes, rotating halfway through, for roughly 40 minutes, or until a cake tester comes out clean.
Let cool completely on racks and then decorate as you wish.
Toppings - this is from different recipes
1/2 cup butter
1/2 cup shortening
4 cups confectioners' sugar
1/2 teaspoon salt - i did not put this in
2 teaspoons vanilla extract
1 cup/ 200ml whipping cream
100g cooking chocolate, if you want dark colours can add more
In a mixing bowl, cream shortening until fluffy. Put butter and cream until fluffy. Add sugar, and continue creaming until well blended. Add salt, vanilla, and whipping cream. Last put the cooking chocolate & mix well. Blend on low speed until moistened. Beat at high speed until frosting is fluffy.
